Brown Sugar Muffins

These are my kids favorites.  I prefer the flavor with the butter, but you can use whatever you have on hand. Flour choice is up to you too, but I love the half and half white, wheat.

Brown Sugar Muffins

½ c. butter or oil
1 c. brown sugar
1 egg
1 c. milk
1 tsp. vanilla
2 c. flour (1 white, 1 wheat)
1 tsp. soda
¼ tsp. salt
½ c. nuts (opt.)

Combine wet ingredients. Add dry ingredients and mix until just combined. Fill greased muffin tins ¾ full. Sprinkle tops with brown sugar. Bake 375 for 20 min.
