Crisp Pie Topping

This is a really nice topping for a fruit pie, that allows you to use your two-crust recipe to make 2 fruit pies.  Just top each one with this instead of a top crust.  It is my particular favorite on cherry pie.  Pies topped with this are usually called Dutch style (ie. Dutch Apple etc).  Also use this on top of a bottle of apple pie filling to make an apple crisp.

Crisp Pie Topping
2 Tbsp. brown sugar
1/3 c. flour
1/3 c. quick oats
3 Tbsp. butter

Combine in a small bowl, sugar, flour and oats.  Cut in cold butter until crumbly.  Sprinkle over pie.  Bake 35 min. at 375.  Will top one pie or one 9x9 pan of fruit for a crisp.
