Crock Pot Rice

I came up with this to go along with an oven roasted meat dish.  It is a nice side dish, my kids enjoyed it and I like the crock pot convenience.

Crock Pot Rice
2 c. rice
4 c. water
1 can cream of chicken soup
2 Tbsp. dried minced onion
1 Tbsp. dried parsley flakes
1/2 tsp. seasoning salt

Stir all ingredients together in a crock pot.  Cook on high for 2 1/2-3 hours.  Stir and serve with seasoning salt.

As serious rice fans in our house, I will totally have to try this. How many cups of rice did it make? Could you make it in a smaller crockpot?

You could cut it in half and make it in a smaller crockpot. You could try freezing the extra 1/2 soup can of cream of chicken or you could use it to make Chicken Monet, which would also be one you would cut in half for your size household.
