Pancakes

This batch was made by my daughter.  It is great to have help in the kitchen as they get older!! This makes a nice, light, slightly eggy pancake.

Pancakes
2 c. flour
3/4 tsp. salt
1 tsp. baking soda
3 Tbsp. sugar
1/4 c. oil
2 eggs
1 3/4 c. milk
1/4 c. vinegar

Place dry ingredients in a bowl.  Mix milk and vinegar together, then add to the dry ingredients along with the eggs.  Stir together.  Batter may be slightly lumpy.

Notes:  I like to use powdered milk in this recipe.  I do that by adding 2/3 cup powdered milk with the dry ingredients, then adding 1 3/4 c. water with the vinegar.
