Zucchini Cake

My sister chided me for not having enough zucchini recipes on here at her time of need. :) So here is another one to try!

Zucchini Cake
3 c. grated zucchini
2 1/2 c. sugar
1 c. walnuts, chopped
1 1/2 c. vegetable oil
4 eggs
3 c. flour
1 1/2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Mix zucchini, sugar, oil and eggs.  Combine remaining ingredients and mix in.  Grease and flour a bundt or tube pan.  Bake at 350 for 1 hour.  Let pan cool before turning out.

Notes:  I wanted to make this in my 9x13 and frost it with cream cheese frosting, so I baked it at 350 for 45 min. and frosted it with this frosting:

Cream Cheese Frosting
¾ cube margarine, softened
3 oz cream cheese, softened
1 tsp. vanilla
4 -5 c. powdered sugar

Mix margarine, cream cheese and vanilla together.  Incorporate powdered sugar a few cups at a time until desired consistency.  If you need to thin it, use a bit of milk.

I think you could mix this very thin and use it as a drizzle over the bundt style cake too.  Haven't tried yet.  Let me know if you do and what the results are... Thanks!

Thanks! If I get any more out of the garden I will have to try this....your picture makes it look super yummy! Anything with cream cheese frosting is SUPER YUMMY!
