Lemon Sauce

Use this on Gingerbread or carrot pudding.


Lemon Sauce
1/2 c. sugar
1/4 tsp. salt
2 Tbsp. cornstarch
2 c. water
1/4 c. lemon juice
1 Tbsp. lemon rind, finely grated
3 Tbsp. butter or margarine

Mix together sugar, salt and cornstarch in a small bowl.  In a small saucepan, bring water to a boil, stir in sugar mixture.  Cook, stirring constantly, until mixture is clear and thick.  Remove from heat.  Stir in lemon juice and rind.  Add butter, stir to melt.  Serve warm.
