Triple Surprise Bars

We have been making a lot of bar cookies lately.  Spring is here, which means three of my children are starting soccer and one is running track.  Bar cookies require little time input from mom and offer a quick energy boost for the kids between activities to ward off hunger.  This recipe is from a little booklet published by Reiman years ago called Bar Cookie Bonanza. 

Triple Surprise Bars
1 c. butter or margarine, softened
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 c. flour
2 tsp. baking powder
1 1/2 c. quick cooking oats
1 c. chocolate chips
1 c. shredded coconut
1/2 c. chopped nuts

Cream together butter, sugars and eggs until smooth.  Add flour and baking powder.  Stir in oats, coconut and chopped nuts.  Spread into greased 10x15 jellyroll pan.  Bake at 350 for 20 min.  Cool, cut into bars.

Notes:  Take this out of the oven when still light colored and almost doughy looking.  We have enjoyed these with peanut butter chips and the photo shows a batch with toffee bits.

Made these in Idaho. Ava (five years) liked them the best, but they were so YUMMY!
