Carrot Cookies (Sally Turner)
1 c. sugar
¾ c. shortening
½ tsp. salt
2 eggs
1 c. grated carrot
1 Tbsp. grated orange rind
2 ¼ c. flour
2 tsp. baking powder
Cream sugar and shortening. Beat in 1 egg at a time. Mix all ingredients and bake at 350 for 10-12 min. Use juice of orange to make powdered sugar icing.
