Pumpkin Cookies

This big batch of cookies used to make enough to share (before my kids became teenagers) and I had a neighbor across the street who would always look forward to a plate.

Pumpkin Cookies
1 c. oil
3 c. sugar
2 eggs
2 tsp. vanilla
5 c. flour
2 tsp. nutmeg
2 tsp. cinnamon
1 (1 lb.) can solid pack pumpkin
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 pkg. chocolate chips

Mix oil, sugar, eggs, pumpkin, vanilla, nutmeg, and cinnamon. Sift flour, baking powder, baking soda, and salt. Mix with wet ingredients. Add chips, bake at 375 for 10-15 min. Makes 5 dozen.
