Oatmeal Dinner Rolls

Oatmeal Dinner Rolls (Taste of Home)

2 c. water
1 c. quick oats
3 Tbsp. butter or margarine
1 Tbsp. yeast
1/3 c. warm water
1/3 c. packed brown sugar
1 Tbsp. sugar
1 ½ tsp. salt
4 ¾-5 ¼ c. flour

Boil 2 c. water. Add oats and butter and cook for 1 min. Remove from heat and cool to lukewarm. In a mixing bowl, dissolve yeast in warm water. Add the oat mixture, sugars, salt and 4 c. flour; beat until smooth. Add enough remaining flour to form a soft dough. Knead 6-8 min. Let rise until double. Punch down, let rest 10 min. Shape into 18 balls. Place in 2 greased 9 inch round baking pans. Cover and let rise until double. Bake at 350 for 20-25 min. Notes: to use rapid-rise yeast, mix the sugars, salt, 4 c. flour and yeast.  Add the 1/3 c. warm water to oatmeal, then mix the two together and proceed as above.
