Blueberry Cake Muffins

I've tried many blueberry muffin recipes and these are my favorite so far.  They have a nice texture and a sweet flavor.  I usually use frozen blueberries for muffins.

Blueberry Cake Muffins
2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. soft margarine
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. milk
1 c. blueberries (fresh or frozen)

Beat margarine, sugar, eggs and vanilla.  Add dry ingredients and milk.  Fold in blueberries.  Bake at 375 for 20 min. Yield 1 dozen.

Note: I used butter flavored shortening.  When using frozen blueberries, do not thaw, just stir in directly from the freezer.
