Peach Brown Betty

We were given some peaches that were a bit bumped and bruised.  We suffer this kind of trial with patience and forbearance (smile!).  I turned to great grandma's cookbook for wisdom and found this scrumptious old fashioned dessert.  You can make this with apples too.

Peach Brown Betty
2 c. bread crumbs
1/4 c. melted butter or margarine
6 c. peeled, sliced peaches
1/2 c. brown sugar (you can use white)
1/2 tsp. nutmeg
1/4 tsp. cinnamon
1 1/2 Tbsp. lemon juice
1 Tbsp. lemon zest
1/2 c. water

Combine the bread crumbs and the melted butter and arrange one third of this mixture on the bottom of a 1 1/2 quart casserole dish.  Cover with half the peaches.  Stir together the sugar, spices and remaining ingredients.  Pour 1/2 of the liquid over the peaches.  Layer 1/3 of the bread crumb mix over that.  Top with remaining peaches, remaining liquid and finally the last of the crumbs.  Cover and bake at 375 for 30 min. Remove cover and bake for 30 min. more.  Serves 6-8.  Serve warm with cream.

Notes:  This is the peach variation for Apple Brown Betty.  Replace peaches with apples for the other.  I used about 8 cups of peaches. We ate it with ice cream. Make your own bread crumbs by tearing white or wheat bread into a food processor or blender and pulsing until it makes crumbs.
