Butter Cake

This is a very unassuming looking dessert, but scrumptious in the mouth and a must for butter lovers!

Butter Cake
2 cubes butter (the real stuff), softened
2 c. sugar
2 eggs
3 c. flour
2 tsp. baking powder
2 tsp. almond extract

Butter should be soft, but not melted.  Mix butter, sugar and eggs. Add flour, baking powder and extract.  Mix into a stiff dough. Divide into 2 balls. Press into 2 greased pie plates. Brush with beaten egg. Bake @ 350 for 30 min.  Slice in narrow wedges to serve.

Notes: Nice for a buffet, as the dense texture makes slices of this a finger food.
