Creamy Minestrone

A friend brought this to me when I had a new baby.  It is so comforting and yummy! Serve it with breadsticks.

Creamy Minestrone
1 c. chopped onion
1 c. chopped green pepper
2 c. celery
12 Tbsp. butter
Saute together.  Add:
2 c. diced potatoes
2 c. sliced carrots
2 c. green beans
4 c. water
4 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic salt

Cook 45 min.- 1 hour on low until vegetables are tender.  Thicken with about 3 Tbsp. flour, stirred into 3 c. milk.

Note:  I toss in whatever leftover veggies are in the fridge too. :)
