Cookie Tips

Yesterday I found myself making Cindy's Chocolate Chip Cookies and thought I would share this tip.  It comes from my friend Greta. 

You can bake twice as many cookies at once if you load two cookie sheets and place one on the bottom rack of the oven and one on the rack just above.  Bake for half the time the recipe calls for, usually about 5 minutes, then switch places, moving the top cookies down and the bottom cookies up, and bake for the last 5 minutes.  I use this trick all the time, but especially when the batch makes dozens of cookies.


 Another thing I have talked about is freezing cookie dough.  You can do this in balls, but I am lazy and I do it by rolling the dough into a log and freezing, then I slice it with a knife and bake. I love suddenly cookies!
